Call for Papers: Functional Foods, Bioactive Compounds, and Innovations in Health-Promoting Diets

The intersection of diet and human health has never been more prominent. As consumers increasingly seek foods that offer physiological benefits beyond basic nutrition, the demand for functional foods rich in secondary metabolites and bioactive compounds is surging. However, successfully bringing these health-promoting foods to the global market requires a multidisciplinary approach.

Trophos Science of Food is launching a thematic Call for Papers focusing on the holistic development of functional foods. We invite researchers to submit original research, comprehensive reviews, and short communications that explore the extraction of bioactives, their stability during processing, their microbiological safety, and the consumer behaviors driving their acceptance.

Topics of Interest We are particularly interested in high-quality submissions that address the following dimensions of functional foods:

  • Bioactive Chemistry and Health: Extraction, isolation, and characterization of secondary metabolites (e.g., polyphenols, flavonoids, peptides) from natural sources, and their bioaccessibility and bioavailability in food matrices.

  • Processing and Formulation: The impact of emerging and conventional processing technologies on the retention, stability, and efficacy of functional ingredients.

  • By-Product Valorization: Innovative recovery of health-promoting compounds from agricultural and food processing waste streams to support circular bioeconomies.

  • Microbiology and Food Safety: Ensuring the microbial stability and safety of novel functional formulations. Studies utilizing risk assessment models to evaluate the safety of upcycled ingredients or novel matrices are highly encouraged.

  • Sensory Science and Consumer Behaviour: The impact of functional ingredients on flavor profiles and sensory acceptance. We welcome studies on consumer psychology, willingness-to-pay, and how health claims and sustainability labels influence dietary choices.
