Call for Papers: Advances in Food Science, Technology, Safety, and Sustainability

Overview

The global food system is undergoing a rapid transformation. Driven by the need for sustainability, shifting consumer preferences, and the continuous emergence of foodborne hazards, there is an urgent demand for innovative research in food science. Trophos Science of Food is pleased to announce an open Call for Papers for our inaugural issues. We invite original research articles, comprehensive reviews, and short communications that explore novel processing technologies, ensure microbiological safety, and advance our understanding of food chemistry and consumer behavior.

Topics Covered

We welcome submissions that provide robust, scientifically validated insights across the following key areas:

  • Food Safety and Microbiology: Detection, prevention, and control of foodborne pathogens and spoilage organisms. We particularly encourage studies utilizing Quantitative Microbial Risk Assessment (QMRA) to evaluate pathogen exposure, as well as epidemiological research on the prevalence and concentration of Salmonella in chicken meat and other critical global supply chains.

  • Alternative and Sustainable Proteins: Advances in plant-based, cell-cultured, and precision-fermentation proteins, including their techno-functional properties, safety profiles, sensory acceptance, and nutritional equivalence to traditional sources.

  • Food Chemistry and Bioactives: Extraction, characterization, and application of natural antioxidants, preservatives, and functional ingredients, including their interactions within complex food matrices.

  • Food Processing and Engineering: Novel, non-thermal processing technologies (e.g., high-pressure processing, pulsed electric fields), active and intelligent packaging solutions, and sustainable food waste valorization.

  • Sensory Science and Food Behaviour: Cross-cultural sensory profiling, the psychological and socio-economic drivers of dietary habits, and consumer acceptance of novel food technologies and sustainability labels.

All submissions will undergo a rigorous single-blind peer review process to ensure scientific integrity and quality.

  • APC Waiver: To celebrate our launch, TROPHOS is offering a 100% Article Processing Charge (APC) waiver for all manuscripts submitted on or before December 31, 2026. Accepted articles will be published fully Open Access (CC BY 4.0) at no cost to the authors.
